Felii fragede de piept de pui \u00eenv\u0103luite \u00eentr-un sos fin \u0219i cremos de ciuperci cu sm\u00e2nt\u00e2n\u0103.<\/p>\n<p>Numele de \u201eescalop\u201d vine de la\u00a0<a href=\"https:\/\/en.wikipedia.org\/wiki\/Scaloppine\" target=\"_blank\" rel=\"noopener noreferrer\">\u201escaloppine\u201d<\/a>\u00a0\u2013 adic\u0103 felii sub\u021biri de carne. Ele pot fi din carne de vi\u021bel, porc sau pui. Metoda de preparare a acestui escalop de pui confer\u0103 pieptului o fr\u0103gezime aparte, el fiind mai \u00eent\u00eei pr\u0103jit rapid \u0219i apoi g\u0103tit \u00een sosul cremos de sm\u00e2nt\u00e2n\u0103 cu ciuperci.<\/p>\n<p>Escalopul se poate face cu fileuri de piept de pui dar \u0219i cu pulpe dezosate. Ciupercile folosite ar fi bine s\u0103 fie proaspete. Cele mai comune sunt cele tip champignon de cultur\u0103 (albe sau brune) dar, dac\u0103 ave\u021bi la \u00eendem\u00e2n\u0103 \u0219i c\u00e2teva ciuperci de p\u0103dure, le pute\u021bi combina cu acestea \u0219i ve\u021bi ob\u021bine o m\u00e2ncare cu savoare deosebit\u0103.<\/p>\n<p>Sm\u00e2nt\u00e2na folosit\u0103 este una dulce, ca pentru fri\u0219c\u0103, cu min. 30% gr\u0103sime. NU sm\u00e2nt\u00e2n\u0103 vegetal\u0103, nu mizeria de Gran Cucina! Din p\u0103cate, sm\u00e2nt\u00e2na acri\u0219oar\u0103 (la g\u0103letu\u0219\u0103) de la noi, chiar daca are 24% gr\u0103sime, se cam coaguleaz\u0103 c\u00e2nd este \u00eenc\u0103lzit\u0103, a\u0219a c\u0103 nu o recomand pentru prepararea acestui escalop de pui.<\/p>\n<p>Nota final\u0103 de arom\u0103 \u0219i prospe\u021bime a acestui escalop de pui cu ciuperci o d\u0103 gremolata \u2013 adic\u0103 un mix de p\u0103trunjel verde, usturoi \u0219i coaj\u0103 de l\u0103m\u00e2ie.<\/p>\n<p>Din cantit\u0103\u021bile de mai jos rezulta cca. 4 por\u021bii de escalop de pui cu ciuperci \u0219i sm\u00e2nt\u00e2n\u0103. Ciupercile se pot t\u0103ia \u00een sferturi sau de pot felia. Eu am ales s\u0103 le tai \u00een felii foarte sub\u021biri.<\/p>\n<p>Am t\u0103iat pieptul de pui \u00een jum\u0103tate (pe lung) \u0219i apoi am scos c\u00e2te 3 felii din fiecare parte, cu grosime de cca. 1-1,5 cm. Nu trebuie b\u0103tute cu ciocanul! Le-am s\u0103rat \u0219i piperat bine pe ambele p\u0103r\u021bi \u0219i apoi le-am t\u0103valit prin f\u0103in\u0103.<\/p>\n<p>Am ales o crati\u021b\u0103 sau tigaie mai ad\u00e2nc\u0103 \u00een care am pus la \u00eenc\u0103lzit untul \u0219i uleiul. C\u00e2nd acestea au \u00eenceput s\u0103 sf\u00e2r\u00e2ie, am a\u0219ezat \u00een tigaie fileurile de pui (scuturate u\u0219or de excesul de f\u0103in\u0103). Am lucrat \u00een 2 ture a c\u00e2te 3 felii. Nu aglomer\u0103m tigaia pentru ca pieptul nu se va rumeni ci doar se va albi de la sucurile l\u0103sate.<\/p>\n<p>Am pr\u0103jit feliile la foc iute, c\u00e2te 1 minut pe fiecare parte (c\u0103t s\u0103 se rumeneasc\u0103 u\u0219or). Ce arom\u0103 fain\u0103 \u00eei da untul! Am tras tigaia deoparte \u0219i am scos fileurile pr\u0103jite pe o farfurie. Le-am acoperit lejer cu folie de aluminiu \u0219i le-am l\u0103sat deoparte.<\/p>\n<p>Am pus din nou tigaia pe foc \u0219i am \u00eencins-o bine (f\u0103r\u0103 sa fumege). \u00cen ea a r\u0103mas gr\u0103simea \u00een care s- pr\u0103jit puiul precum \u0219i mici fragmente de carne lipite. Am turnat un p\u0103h\u0103rel de vermut alb (eu am avut Martini Bianco dar pute\u021bi folosi \u0219i un vin alb demisec) ca s\u0103 deglasez tigaia. Am m\u0103rit flac\u0103ra de sub ea \u0219i am a\u0219teptat s\u0103 se ridice vaporii de alcool. Nu v\u0103 teme\u021bi, preparatul final nu va con\u021bine alcool deoarece ace\u0219tia se evapor\u0103. \u00cen urma lor va r\u0103m\u00e2ne doar aroma fain\u0103 a b\u0103uturii.<\/p>\n<p>Am pus \u00een tigaie feliile sub\u021biri de ciuperci \u0219i le-am sotat, la foc iute, p\u00e2n\u0103 le-a sc\u0103zut apa l\u0103sat\u0103 \u0219i s-au rumenit u\u0219or (cca. 5 minute). La final le-am s\u0103rat \u0219i piperat.<\/p>\n<p>Au urmat ceapa \u0219i usturoiul tocate, puse peste ciupercile sotate. Le-am c\u0103lit p\u00e2n\u0103 au devenit translucide, f\u0103r\u0103 s\u0103 le ard (cca. 3 minute).<\/p>\n<p>Am turnat \u00een tigaie cei 200 ml de sm\u00e2nt\u00e2n\u0103 dulce \u0219i am redus focul. Am reintrodus feliile de piept de pui pr\u0103jite \u00een tigaie \u0219i le-am scufundat bine \u00een sosul cremos de ciuperci cu sm\u00e2nt\u00e2n\u0103. Am l\u0103sat totul s\u0103 clocoteasc\u0103 1 minut.<\/p>\n<p>Am pres\u0103rat gremolata peste escalopul de pui \u0219i am stors \u0219i c\u00e2\u021biva stropi de zeam\u0103 de l\u0103m\u00e2ie (cam 1 linguri\u021b\u0103). L\u0103m\u00e2ia merge tare bine cu puiul \u0219i mai \u201etaie\u201d din gr\u0103simea sosului de sm\u00e2nt\u00e2n\u0103.<\/p>\n<p>Am amestecat cu grij\u0103 \u0219i am l\u0103sat escalopul 2-3 minute la odihnit. C\u00e2t s\u0103 se \u00eemprieteneasc\u0103 aromele.<\/p>\n<h2><strong>SERVIRE ESCALOP DE PUI CU CIUPERCI \u0218I SOS FIN DE SM\u00c2NT\u00c2N\u0102<\/strong><\/h2>\n<p>Fiind o m\u00e2ncare cu sos, escalopul se serve\u0219te \u00een farfurii mai ad\u00e2nci, pres\u0103rat vu extra verdea\u021b\u0103 tocat\u0103 \u2013 eu am pus cep\u0219oar\u0103 (chives). Merge bine cu salat\u0103 verde \u0219i felii de p\u00e2ine proasp\u0103t\u0103.
